Easy, cheap, fast, super healthy chicken tortilla soup (bone broth to boot!)

So I just had to share! I’ve made several tortilla soups, but now I’ve come up with the ultimate one –  easy, cheap, fast, super healthy – and I agree with my kids – super yummy!

Instead of chicken breasts that many recipes call for, use organic drum sticks which are pennies on the dollar compared to those high falutin’ breasts. Also, the whole idea here is to have a bone broth soup, which you may not know is an awesome source of nutrition that most of us don’t get near enough of.  Boiling down the bones and cartilage is what gives us the building blocks of health, which I first became aware of when we were all into the Cure Tooth Decay diet. So, get those chicken legs in as early as you can, bring them to a boil and let them simmer as long as possible. If you are so inclined and have the time, you can use a whole chicken, but the legs are just so cheap!

Ingredients:

2 tablespoons vegetable oil
1 onion, diced
2-4 cloves minced garlic
1 large can diced tomatoes
8-10 organic chicken drumsticks
1 Tbsp cumin
Salt and freshly ground black pepper
1 cup roughly chopped fresh cilantro leaves
2 limes
2 avocados, pitted, sliced
2 cups shredded cheese and 1 bag of non-gmo tortilla strips

Optional: fresh jalapeno and a can of black beans, drained and rinsed

Directions
Fill your big soup pot (mine is 6 qt.) 2/3 full of water, bring it to a boil and put in the chicken legs, skin and all. Bring to a boil, then simmer as long as you have the time. 35 minutes will suffice, but all day is better. Remove the chicken, let it cool, pull the meat from the bones and shred. Discard the skin. In a large skillet, heat the vegetable oil. Add the onions and cook for 2 minutes. Once the onions have softened add the garlic (and jalapenos) and cook for another minute. Pour onion/garlic, tomatoes, chicken and (beans) into the soup pot.  At this point I like to put the bones back in to simmer for the benefits of the bone broth. Add fresh cilantro and cumin to the pot. Stir and serve. Garnish with lime, tortilla strips, avocado slices and cheese.

Time: 45 minutes to 8 hours

Serves 8-12
